Overview
Dartmouth is a refined expression of amaretto, low in sugar and rich in complexity. Inspired by the Gaspé Peninsula and its Italian roots, it blends sweet almond, herbs, and forested depth into a smooth, earthy liqueur shaped by tradition, place, and restraint.
Dartmouth pays tribute to Gaspé’s ties with Italy, born during the cod trade of the 1800s. Using traditional maceration methods, it fuses old-world technique with northern wildness. The result: a familiar yet surprising liqueur, where culture and nature sip in unison.
Dartmouth river
Its name comes from the Dartmouth River—a clear, salmon-rich waterway known for its wild botanicals. These hand-harvested ingredients, gathered along its banks, bring local character to every drop. Grounded in terroir, this amaretto weaves together native flora, pristine waters, and a spirit of craftsmanship that reflects the land itself.
Ingredients
Lichen
Earthy, dry, and lightly briny, evoking mossy rocks and the crisp air of northern woodlands.
Maceration
The botanicals are soaked in alcohol for four weeks to extract their full essence.
Spring Water
Straight from Gaspé's natural reserves ; Used to round and balance the final blend.
Raspberry leaves
Soft and herbaceous, offering a gentle green note that recalls summer forest undergrowth.
Vanilla & Nut extracts
Added after maceration to complete the almond-forward signature.
Low Sugar Profile
Considerably less sweet than traditional amarettos, emphasizing clarity and structure.

Nose
The aroma of our amaretto is a captivating blend of natural freshness, earthy notes of lichen and vegetable moss, enriched by the fruity sweetness of dried raspberry leaves. Vanilla and almond provide a comforting warmth to this enchanting olfactory symphony. Meticulously hand-harvested ingredients from the Gaspé lands, combined with a two-month maceration in alcohol, create a truly unique and exceptional product.

Palate
The taste of our amaretto bursts with a powerful explosion of aromas, where vanilla and almond dominate with vibrant intensity. Natural undertones of lichen and plant moss add a stimulating, earthy depth. A subtle nuance of dried raspberry leaves brings a fruity touch that perfectly balances the composition. Its sugar content, three times lower than other amaretto liqueurs, further reinforces its distinctive character.
