Overview
Dartmouth is a refined expression of amaretto, low in sugar and rich in complexity. Inspired by the Gaspé Peninsula and its Italian roots, this no allergens spirit blends sweet almond, herbs, and forested depth into a smooth, earthy liqueur shaped by tradition, place, and restraint.
Dartmouth pays tribute to Gaspé’s ties with Italy, born during the cod trade of the 1800s. Using traditional maceration methods, it fuses old-world technique with northern wildness. The result: a familiar yet surprising liqueur, where culture and nature sip in unison.
Dartmouth river
Its name comes from the Dartmouth River — a clear waterway rich in salmon, renowned for its wild plants. Handpicked lichens and raspberry leaves gathered along its banks bring a local character to every drop. Rooted in the terroir, this amaretto blends native flora, pure waters, and craftsmanship that reflects the richness of the land.
Ingredients
Lichen
Earthy, dry, and lightly briny, it evokes mossy rocks and the crisp air of northern woodlands, showcasing its roots as a locally sourced ingredient.
Natural Almond Aroma
Natural almond flavor delivers a soft, nutty sweetness with delicate warmth, evoking marzipan notes that enhance liqueurs, desserts, and refined creations.
Spring Water
Carefully sourced straight from Gaspé’s pristine natural reserves, it is thoughtfully used to gently round out and perfectly balance the final blend.
Raspberry Leaves
Delicate and soothing, raspberry leaf reveals a subtle herbal note, evoking the gentle, refreshing freshness of bright summer clearings.
Natural Vanilla Aroma
Added after maceration, they complete the pronounced almond signature by bringing a subtle and harmonious touch that perfects the overall balance.
Low Sugar Profile
Considerably less sweet than traditional amarettos, it places strong emphasis on clean clarity and a well-defined, balanced structure.
By The Nature
Amaretto has long embodied Italian warmth and flavor. We wanted to honor that legacy while expressing the wild beauty of our home. Inspired by the Dartmouth River, we infused that sense of nature into every drop. By soaking dried raspberry leaves and lichen in alcohol, we discovered an earthy, fruity essence that’s entirely unique. We replaced almonds with apricot kernels, which mimic almond flavor while remaining nut-allergen free, allowing everyone to enjoy Dartmouth’s smooth, complex character.
These ingredients, combined with vanilla, create a balance of familiarity and novelty.
Aromatic, fresh, and deeply layered
With three times less sugar than traditional Amarettos, Dartmouth is light yet flavorful, making it easy to enjoy neat, on the rocks, or in an Amaretto Sour.
Nose
The aroma of our amaretto is a captivating blend of natural freshness, earthy notes of lichen and vegetable moss, enriched by the fruity sweetness of dried raspberry leaves. Vanilla and almond provide a comforting warmth to this enchanting olfactory symphony. Meticulously hand-harvested ingredients from the Gaspé lands, combined with a two-month maceration in alcohol, create a truly unique and exceptional product.
Palate
The taste of our amaretto bursts with a powerful explosion of aromas, where vanilla and almond dominate with vibrant intensity. Natural undertones of lichen and plant moss add a stimulating, earthy depth. A subtle nuance of dried raspberry leaves brings a fruity touch that perfectly balances the composition. Its sugar content, three times lower than other amaretto liqueurs, further reinforces its distinctive character.

Product History
Curiosity drives everything we create at O’Dwyer Distillery. Dartmouth Amaretto began as a tribute to
Italian tradition and became a story of innovation rooted in Gaspé. Named after the Dartmouth River and inspired by Gaspé’s former Italian consulate, Dartmouth bridges two worlds: Italian elegance and Gaspé authenticity. It’s an Amaretto reimagined — bold, inclusive, and
unmistakably ours.
