By The Nature
We source pure syrup from the Fédération des Producteurs Acericoles du Québec and our own small sugar stand. Fermented, distilled, and aged in oak for three to five years, the result is a dry, complex eau-de-vie that falls between whisky and rum — layered with wood, vanilla, and warm spice, made from maple syrup, the lifeblood of our land.

Every spirit we make begins with a question: Can we capture Gaspé itself in a bottle? With Radoune, we distilled the forest. With St. Pierre, we bottled our history. With Gaspésienne No. 20, we ventured into new territory — a spirit made from maple syrup, the lifeblood of our land. We dreamed of making rum, but importing molasses proved impractical. Instead, we turned to something truly local: maple syrup. That choice helped pioneer Acérum, a new spirit category uniting distillers across Québec — fermented, distilled, and aged entirely from maple syrup. Named after the historic Gaspésienne No. 20 cod-fishing vessel, this spirit honors our maritime heritage. It captures the courage and resilience of Gaspé’s fishermen while embracing innovation and craftsmanship.
