O’Dwyer Distillery: Innovation in the Service of Tradition

Located in Gaspé, Quebec, O’Dwyer Distillery has made its mark on the international scene through a bold innovation: creating the world’s first craft gin made with wild mushrooms. Staying true to artisanal tradition, we work with the natural riches of our surrounding forests to craft exceptional spirits.

A Unique Range of Artisanal Spirits

Our products are designed to surprise and delight discerning spirits lovers:

  • Gin Radoune – A delicate blend of four hand-harvested wild mushrooms: chanterelle, tube chanterelle, honey mushroom, and candy cap. Each variety is precisely measured to fully express its aromas.

  • Aged Gin Radoune – Matured for 15 months in Canadian rye barrels, combining elegant woody notes with the earthy character of mushrooms.

  • Acerum – A one-of-a-kind spirit made from fermented maple syrup, less sweet than traditional rum and reminiscent of grappa or tequila, partially aged in-bottle with an oak stick.

  • Candy Cap Cream – A velvety cream liqueur with a natural maple-caramel flavor, created without artificial aromas.


Modern Facilities Serving Traditional Craft

Our distillery is equipped with copper and stainless steel stills, allowing both small-batch and larger-scale production.
We also operate a mash tun and 2,000-liter fermenters to prepare our cereal bases, intended especially for future whisky production.

Every stage of production is carefully monitored, with distillation cycles sometimes lasting 12 to 14 hours to ensure optimal quality.


The Art of Barrel Aging

Our aging cellar holds a variety of barrels — bourbon, rye, maple, tequila, and rum. Testing has shown that rye barrels offer particularly harmonious results when aging our gin.


Expanding Internationally

While Quebec remains our primary market, we are actively expanding into Germany, France, and England, where our creations — especially Acerum — captivate consumers with their originality and deep connection to Quebec’s terroir.
